Whopper Quesadillas

I saw someone on the socials making sheet pan Big Mac quesadillas and I said “ya know what, that looks great.” I changed it up a bit so I’m calling mine a Whopper quesadilla. Tomato tomahto. Assembly is easier than with a standard taco bar and clean up is easy too…as long as you don’t set off the smoke alarm like I did, oven quesadillas are the way to go.

Start by browning some ground beef with some garlic powder, worchestershire sauce, salt, and a heavy squirt of dijon mustard. Once it’s cooked through, set aside to drain on a paper towel-lined plate. Assemble by layering oiled white corn tortillas on a baking sheet (oiled side down). Next, top the tortillas with American cheese and then layer on the ground beef, veryyy thinly sliced white onion, chopped pickles, and shredded Mexican blend cheese. Top with another layer of tortillas and brush with oil. Cook in a hot oven for about 5 minutes before pulling them out, topping with another baking sheet, and flipping over to cook the other side. Warning: if your smoke alarm is as sensitive as mine, you will likely set it off. When the cheese has melted and the tortillas fuse together, you’re good to go. Flip the whole thing out onto a serving dish so you can cut it up into individual servings and top with shredded lettuce, chopped tomato, burger sauce (ketchup, mayo, white vinegar, salt, and pepper), and sesame seeds.

The American cheese is key here because it melts so nicely and gives it the distinct fast food taste – but using the shredded cheese on the other side keeps it from being ovepowering. And if you want to really feel like you’ve got a tortilla bun, the sesame seeds are a tiny but necessary detail. Honestly, it’s important to use those super thin onions vs. browining them with the meat. It all just works. Let’s face it, those fast food burger joints have been doing their thing for decades so might as well take as many hints from them as possible. I’ve made two versions of cheeseburger tacos before (here and here), but there’s something about the way it’s pressed that really feels like you’ve moved firmly into burger territory…but with tortillas. It’s definitely more takeout style.
